The Asado or Barbeque is one of the most traditional meals in Argentina. But the asado itself is not just a meal, it is a social event in itself. It all starts with the lightning of the wood logs that within an hour or so will become the heart of the grilling energy. Then the grilling begins based on the grilling time of the different meat to be used. A normal well paced barbecue should take an hour to cook a nice piece of sirloin. So we are talking of at least two hours that are usually shared with friends and family gathering around the “grill master” and enjoying a social event that goes far more than just the grilling.
Now, an asado can be prepared in many different ways, and every meat has it special secret to get it done to perfection. Some are prepared before getting to the grill some are not touched until it is time to serve. Every Grill Master has its own recipe. Some turn the meat over every five minutes, some do it once and for all every half hour. Each one has its own personal way of doing it. And every one uses their own secret recipe to get the most out of a it.
